Presentation
This wine is the setting of the property: a selection of the best plots, a sorting to keep only the best berries, a separate vinification in small stainless steel vats and aging in barrels coupled with aging in amphora and in jar.
This wine is delicate, elegant, complex...Perfect for aging for ten years but also a quicker approach for the most impatient! A rare wine produced in small quantities.
The vintage
2016 is a great vintage with its ideal spring temperatures that enabled the bud burst to occur in the best possible conditions. The summer was then very hot and dry. A vintage of great complexity and power!

Vineyard surface area: 21 hectares
Grape varieties: 80% Merlot, 15% Cabernet Franc and 5% Cabernet Sauvignon
Appellation: Montagne Saint-Emilion

Clay-limestone, clay-siliceous and sandy soils.
In the vineyard
Manual pruning in winter on hillside plots then later on other plots to delay bud burst and the risk of frost.
Pruned branches crushed and reused in compost for the soil

Vinification
Traditional in temperature-controlled stainless steel vats combined with a micro-oxygenation process.
Alcoholic fermentation followed by malolactic fermentation
Daily pumping over and pigeage (punching down the cap)
Ageing
15 to 18 months in concrete vats, French oak barrels and terracotta amphorae.
